A sea-change for sustainable menus
Our special ‘Sea-change for our shorelines’ session will explore how innovation, entrepreneurship and captivating story-telling are delivering marine-based sustainability solutions and culinary potential.
It’s a whole new way of thinking about the potential of our sea-life and seabeds and the potential they hold - with the end product enhancing restaurant menus.
Come and join the conversation with our speakers.
Anthony Pender, seafood campaigner and founder of Faber restaurant, and the winner of the 2025 Peach 20/20 Sustainability Champion Award, will explain his philosophy to choosing suppliers and what products he will and won’t sell.
Rachel Walker Boggis, co-founder of Disco Scallops and a winner at the 2025 BBC Food & Farming Awards, has pioneered a new method of scallop production that not only limits damage to the seafloor, but gives small-scale crab and lobster fishermen the opportunity to diversify and increase the value of their fishing trips. And yes it does involve ‘disco lights’!
The session underpins a central theme of how creative menus are the gateway to sustainability - driving efficiencies, reducing carbon footprints and enhancing the customers' experience.
The full Planet Peach summit agenda spans tech, energy, regulation, innovation, supply chains and operations - with one clear theme running through it all: Why profit is now the key driver of meaningful, sustainable action.
