Atlantic Club Previews Coyo Taco London
Guests heard from Kuvi Hospitality founders Vikram Kumar and Richard Sears, CEO Shereen Ritchie, CMO Rebecca Di Mambro and Scott Linquist, one of the three founders of the iconic Miami-born brand, as they shared the vision behind bringing Coyo Taco to the UK.
The ambition that drives the brand is what stands out loud and clear for this new entrant to the UK scene.
So why launch in London? Both Vikram and Richard spoke about their belief that Mexican food in the UK deserves a rethink and that Coyo will lead that change. Not just by serving great food - and the food is not just at the heart of the brand but high quality as those attending will testify - it’s also about creating places that are culturally relevant, distinctive and memorable.
As Richard explained, Coyo’s point of difference is not only what it serves, but the atmosphere it creates. With further openings already in the pipeline, each location will have its own character and personality. The debut London site takes inspiration from the original Coyo Taco in Miami’s Wynwood neighbourhood, complete with a hidden speakeasy-style bar, but as Shereen said others will range from kiosks at travel hubs to high-street fast-casual operations.
Rebecca shared how marketing starts with food as the hero, but brings together Mexican soul, Miami attitude and a local relevance that makes sense for its new London audience.
And for Coyo co-founder Scott - who flew in to support the launch - it all began with a lifelong fascination with Mexican culture and cuisine, followed by decades spent travelling, learning and understanding what makes authentic Mexican food special.
The evening served as a reminder that the most compelling hospitality brands are built on more than great products. They are built on stories, culture and the ability to create a feeling that people want to be part of.
With the official opening set for 22 June, Coyo Taco’s arrival is one of the most anticipated launches of the summer hospitality calendar.
